Easy Pumpkin Chocolate Chip Muffins from Greg Wharton
“The best muffins in the world!”

Ingredients:
1 2/3 cups of all-purpose flour
1 cup of granulated sugar
1 ½ tablespoons (combination/mix) of ground cinnamon,
cloves, and ginger
1 teaspoon of baking soda
¼
teaspoon of baking powder
¼
teaspoon of salt
2 large eggs
1 cup of plain (canned) pumpkin
1 stick of butter (melted)
1 cup (6 ounces) of chocolate chips and/or nuts
Heat oven to 350. Lightly grease/butter muffin pans. Thoroughly
mix flour, sugar, spices, salt, baking soda, and baking powder
in large bowl. In another bowl add eggs, pumpkin, and butter.
Whisk until blended. Stir in chocolate and/or nuts. Pour over
dry ingredients and fold until moist. Scoop into muffin pans
and bake for 20-30 minutes or until done in center. Cool on
rack. Easy. Eat some right away. They’re even better
tomorrow. Yum!
